By no means would I consider myself an established cook. I’m more of a- we need to eat, this is what we have, let’s throw it together and see what happens kind of cook. Maybe that’s why I love making soup. It’s forgiving and usually welcoming to all of those forgotten veggies you need to use asap. This Chicken Avocado Lime Soup is a great way to get in a few herbs and veggies and feed a family for a few days on a small budget. We eat soup year round, but it’s especially good during cold weather (like tomorrow when Fl. temps are in the 30’s!). Not to mention staple soup ingredients like garlic and onion make it great for fighting off whatever viral bug is going around this season. It’s also a perfect soup for those with food sensitivities or restrictive diets as it’s dairy, soy, and gluten free (depending on your choice of toppings).

Ingredients:

1 Whole Chicken

1 Bunch of Chopped Green Onions

2 Jalapenos (minced, use seeds if you like it spicy)

3 Cloves of Minced Garlic

1 Tbsp Ground Cumin

3 Avocados

1/2 cup Cilantro

1-2 Limes

Salt and Pepper to taste

Directions:

In a large pot boil whole chicken. This is key to a great soup. Skip the boxed broth and get more for your money. Feel free to add diced onion, a bay leaf, or salt and pepper to the broth. Depending on the size of your chicken it could take around 30-45 minutes. I like to cook it on low-medium and leave it alone for half of the day or even overnight to get all the goodness out of the chicken.

In separate pot saute jalapenos and green onions. After chicken has boiled, remove bones while leaving meat and broth in large pot. Add sauteed jalapenos, green onions, cumin, and minced garlic.  Cook for 10 minutes on low-medium. Add Salt, Pepper, Lime Juice, and Cilantro.

Top with Avocados, Corn Chips, and an extra dose of Lime if desired.
